A delicious Moroccan dish
that is just perfect for cold winter days. This recipe is with beef, but you
can easily make it with lamb or chicken or even white fish.
INGREDIENTS FOR FOUR
SERVINGS
-500 gr of meat (beef or
lamb) cut in small chunks (no fat)
-One and half teaspoon of
cumin
-One teaspoon of turmeric
-Half a teaspoon of
paprika
-Half a teaspoon of
freshly crushed black pepper
-A few cardamom pods
-One small stick of
cinnamon
-Two bay leaves
-A bit of salt
-One inch of freshly
crushed ginger root
-Three garlic cloves
crushed
-The peel of one lemon,
finely sliced.
-Fresh cilantro
-Two cups of broth of
choice
-Oil for cooking
PREPARATION
1-In oil, place all the
spices (dry and wet, including the lemon peel) in a little bit of oil. Cook on
medium fire until the spices give out their aroma.
2-Add the meat and mix
well so that it is well covered with the spices.
3-Add the broth, potatoes
and green peas. Add a little bit of water if need be.
4-Leave the fire on medium
to low, and cook uncovered until the potatoes are soft.
SERVING
-Serve warm with a fresh
green salad on the side.
