green pea soup with mustard


A tasty soup with a beautiful color, and so easy to make.

INGREDIENTS FOR THREE SERVINGS
-500 gr (about a pound) of fresh green pea –You can also use the equivalent of two cans of green peas, but fresh ones are really better!
-Two garlic cloves, smashed in a mortar.
-Two tablespoons of high quality French mustard - because of the mustard no need for salt. 
-Water at room temperature.
-Some fresh mint for serving

PREPARATION
1-Cook the peas in a large sauce pan adding the smashed garlic.
2-When the peas are cooked take away from the fire and add the mustard. Mix well.
3-Put through a mixer in batches adding about half a cut of water each time. Check that the consistency is to your liking by adding more or less water in the mixer. I find it is better as a heavy kind of soup.

SERVING
-Serve warm with whole wheat bread or “pain campagnard”.
