carrot soup with madras curry


A delicious alternative to the traditional carrot soup. And the color! Oh my!

INGREDIENTS FOR FOUR SERVINGS
-Four cloves of garlic – smashed
-Two teaspoons of Madras curry
-Two small onions – cut roughly
-One kg of carrots – washed, peeled and cut roughly
-One head of lettuce – washed and shredded by hand
-Four small potatoes – peeled and cut in cubes
-Some fresh cilantro
-Salt & pepper to taste
-Olive oil for cooking
-Lukewarm water

PREPARATION
1-In a little bit of olive oil, cook the garlic and the Madras curry until the spices give their aroma.
2-Add the onions and cook while stirring until wilted.
3-Add all the other ingredients and cover with lukewarm water. Bring to a boil then lower the fire to simmering point. Let it cook uncovered until the carrots and the potatoes are done (add water if need be).
4-Let it cool and pass through a mixer.

SERVING
-Serve with warm bread. 
-Chutney or a spicy lemon or mango preserve on the side adds great flavor.
